Carole-Anne Dallo Fall 2018 Blog
Passion and Talent
by Carole-Anne Dallo, December 31, 2018
This quarter has been the most challenging for me to date, although I’ve learned so much about myself, my current limits and what I need to work on. I had been practicing making viennoiseries for several years now but was somehow scared of them. It always seemed like an obscure science to me, despite working in the field for a few years.
After taking a Breakfast Pastries class at Kendall, I was finally able to understand the science and techniques behind them. I was no longer scared of them. Was it because my brain had become accustomed to the subject matter? Or was it because I had put myself in the mental and physical framework to fail and fail often? Who knows. I may not be able to create foul- proof pastries every time, but I do know what it takes to get there. I may have to fail times and times again before reaching perfection, but I know that eventually I will get there. I am so thankful for all my learning experiences, even the worse ones, because they are molding me into the person I want to become. I also know that talent is necessary in this business, but passion is what will get me to success.
